Is there a way to cover or treat my leather western saddle so that I can ride my horse in rainy/wet weather?
No. You cannot completely rainproof your saddle. Cleaning it well with saddle soap and then applying some mink oil or other protectant designed specifically for leather will help protect it if you get caught in a drizzle, etc. But ultimately it will be detrimental to your saddle to let it get soaked. I train horses for a living and have learned not to ride in the rain in order to protect my investment. Saddles don't come cheap! One thing you could try is purchasing an inexpensive synthetic saddle that you could use to ride on wet days.
