Ridding Saddle Brown

Horse show help - desperate!?
I recently started riding again after 2 years, on a 8yo ex show, then beginner lesson pony, now show horse again. I've been riding for 2 weeks so far, and have another 2 before the 1st show we have to be at.
Questions: Ways to build muscle and/or lose weight in just 2 weeks?
Is there any way to get rid of dandruff? This has only started appearing in the last week, am I over-grooming or is it something else? (I can't give any oils or fatty supplements)
He's been barefoot for a few years, does he really need shoes for showing?
The saddle they have for him is brown, but the bridal is black. Is this a huge issues in the medium-low levels of dressage?
Any suggestions are much loved!
Muscle for the horse, heh...
Sorry, should have been clearer
Lots of uphill work and getting him to stretch long and low will help him build his muscle.. also buy a supplement that increases his muscles.. I use a lunging system called a "possoa" that makes them very muscly.
Usually dandruff is a deficiency in a mineral.. So make sure he is getting the right feed and Just use a anti-dandruff shampoo in the mean time.
No if he goes fine without shoes, then there is no need to shoe him.
If you are competing in dressage it does not matter on the take, but more on how u and the horse go.. Also oil your saddle lots and it should darken a bit.
