Guh more saddle questions...Help me!!?
Ok I am stuck between 2 older saddles same price. One is a Stubben Siegfried VSS and the other is a Pessoa. Which is a better brand? The Pessoa has some wear on it like stitching that's missing and the leather is creased on the left flap you can see in the picture. They are both old, but I think the Stubben is older. What is your advice on the better one.

Both are good brands, each have their dedicated followers. I'd say the best saddle is the one that FITS you and your horse. The Stubben is a deeper seat, the Pessoa is a little flatter seat, and you don't mention the seat length nor what kind of a horse the saddle will be used on or what the widths of the saddles are.
In short, if we assume that both saddles are the same seat size and the same tree width, then the choice is the deeper or flatter seat. People vary in their tastes, also your leg length as compared to the flap length of each saddle may also influence your comfort and stability in the saddle. The Stubben probably is older, but they wear like iron so unless there's tree damage or tears, I wouldn't fret too much about the age. The Pessoa brand varies a bit, I have heard the older ones are better quality than the newer ones, actually. But again, if properly cared-for, they aren't junk saddles!
Are they both on the internet, or can you actually see them and do a test ride on them? If you can, I REALLY REALLY REALLY think it's best to just put both of them on your horse and ride them yourself. If you can't bring your horse, then ride them on another horse, or at least sit on them at the tack store. Fit matters more than brand.
