used wintec saddles
Would I be able to use a Wintec GP saddle for Cross Country if I removed the knee-blocks?
I think you could use it without removing the knee blocks.
At the lower levels, you can do cross country in whatever saddle you're normally comfortable jumping in.

I have owned the 500 a/p and have ridden in the cc. I think the wintec 500 ap is a grea starter saddle. I like it more than the cc saddle. I feel like it puts you in a better position and is more secure on the flat. You can definitely jump in it and jump well. I know several girls in pony club that have ridden throug C and jumped over 3'3" in wintec 500 a/p's.
Also, they really hold their value. Find a slightly used one on ebay.
I bought one on ebay about 6 years ago for $200 and sold it in a tack consignment shope for $220! What a deal–I made money!
CC saddles are usually flatter and more forward (flaps are more forward. AP saddles have straighter flaps and higher backs.
My only concern for you is that you say you show hunters. Hunters are all about appearance and some look down on synthetic. However, again, I personaly think Wintecs are great!
If you can afford it, for H/J, I recommend the Bates Hunter saddle: (great deal on ebay package). Wintec is made by Bates, but Bates are leather. I LOVE Bates, and my dressage saddle is bates (I have the Bates Caprilli Dressage), and I have ridden in Bates Caprill cc and Bates Caprilli a/p–love them all! This new Bates h/j is the next saddle that I am going to buy, and it would be an excellent hunter show saddle for you! Of course, it is waaaay more money than you would have to pay for a wintec 500 ap–been there.
